Don't be put off by the length of my recipes. I've tried to make them really simple to follow, so that means there are more steps than most recipes, but hopefully it means that you won't be confused!
Decided to make a meal that has been on my grid before, and that my boys loved. Delicious Waitrose chorizo style sausages on a cannellini bean and fresh tomato stew with herb roasted Charlotte potatoes. I seem to be having a cooking with apples phase! Made chicken in cider with apples at the weekend, and decided to make parsnip and apple soup with the leftover apples. Cox’s apples have such a great flavour, but I didn’t want them to overpower the parsnip, so I just used two in the soup and then caramelised a few slices in butter to garnish. A perfect soup for Christmas too.

I was going to make a Prawn Laska but suddenly had a craving for an egg fried rice - anyone who follows me will know how much I love them! Tenderstem broccoli, pak choi, spring onions, bean sprouts and king prawns, with jasmine rice and an egg. I always add soy, sesame and oyster sauce at the end, which gives it such a great flavour. Topped with thinly sliced spring onion, toasted sesame and a bit more soy!

My son asked me to cook this, which was a bit of a surprise as he’s never been a big fan of beans, especially red kidney beans. This is my two bean chilli, which includes red kidney (obvs!) and black beans. In terms of heat then I use a mix of fresh chilli, powdered chilli and ancho chilli paste, which gives it that depth of flavour and smokiness. Always include a couple of squares of dark green and blacks too! Served with basmati, homemade guacamole, sour cream, lettuce and cheese.

We had old friends over for dinner last night, so always such a lovely evening and a great start to the weekend. Started with salmon, leek and cream cheese en croute with herbed roasted charlottes and sides, and followed with this rhubarb and vanilla panna cotta. Anyone who has followed me for a while will have seen this pasta bake before - it’s a favourite that combines roasted butternut squash, sage and crispy bacon with a rich cheese sauce. We all had seconds even though we were full, as who can resist a cheesy crispy bit!

I had some tenderstem broccoli to use up, so decided to make Chinese chicken and broccoli. Velveted the chicken with Shaoxing, cornflour and salt, which makes it really tender. Made a stir fry sauce of more Shaoxing, oyster sauce, dark and light soy, sesame oil, pinch of sugar and water. Stir fried the onion and chicken, then added garlic and ginger followed by the sauce, then threw in the lightly steamed broccoli. Topped with toasted sesame seeds. Boys loved it!

I found two small tubs of a rich tomato sauce that I’d made in the freezer, so decided to defrost them and make a kind of Melanzana Parmigiana. Cut an aubergine into slices, seasoned them, brushed them with olive oil and then roasted them until golden (turning halfway through). Topped with slices of mozzarella and basil, then rolled them up and laid them in a dish on a bed of the sauce. Then used the rest of the sauce to cover them. Topped with some fresh breadcrumbs mixed with Parmesan and baked until golden and bubbling. Served it with some delicious egg pappardelle from Sous Chef , which I’ll definitely be buying again!

Another #bottomofthefridge lunch! Half a red pepper, some past their best tomatoes, half an onion and a bit of chorizo. Was going to make chorizo shakshuka until I realised my boys had eaten all the eggs 🙄 Sautéed it all together with garlic, oregano and seasoning and served it with the salad leaves that hadn’t wilted in the bag, an avocado and a flatbread out of the freezer. Thankfully really enjoyed it!

As those of you who follow me will know, I love a roasted plum! Bought a large punnet in Tesco fora couple of pounds and roasted them with orange juice, brown sugar and cinnamon. The skins are a bit tougher than normal, so I pulled off the skins before serving them with granola and full fat Greek yoghurt and some of the lovely cooking juices. Happy Sunday!

I love salmon teriyaki and decided to give it a go in a ramen - will definitely be making again! Made a broth of garlic, ginger, chicken stock, white miso and soy. Chicken tacos are a real favourite in our house, especially when served with homemade salsa, sour cream and avocado. I always flatten the chicken breasts first to tenderise them but also to make sure they cook evenly. Then I marinade them in cumin, paprika, oregano, garlic, salt and extra virgin olive oil. I don’t have an air fryer (must be the only person yet to embrace them!) so use my trusty griddle 😊

It’s so nice to be back in the kitchen after having the floor re-tiled. Found half a red pepper, half an onion, tub of olives and some slightly past their best baby San Marzano tomatoes in the fridge, so gently sautéed them in a bit of olive oil. Toasted some bread, then rubbed with a garlic clove before topping with the mixture. Added a tin of gorgeous white tuna, olive oil, balsamic and basil leaves. Will definitely be making again!

Salmon with a thick teriyaki glaze is a real favourite for us, but my son won’t eat it after a bad experience with some motorway services sushi! Say no more! So I used the @lkkeurope teriyaki sauce on a chicken breast and cooked it alongside the salmon. Apparently worked a treat! 😊

I know that cheesy leeks are supposed to be a side dish but I love them as a main. Sliced the leeks into 3cm rounds and steamed them until just cooked, then placed in an ovenproof dish and covered with a very cheesy cheese sauce. I love Haloumi and haven’t had it in ages, so when I saw some in the fridge, I knew I had to make a Haloumi burger for lunch. Ciabatta roll lathered in chilli jam, Haloumi, pickled red onions, pickled gherkins, tomatoes and lettuce, a bit messy to eat but really good!

I really fancied a chicken and leek pie but didn’t have a pie dish, so used my brownie tin! Sautéed chicken pieces until golden (although they seemed to lose their colour in the pie…), sweated down some leeks, then mixed them together and added flour, white wine, chicken stock, fresh thyme and whole grain mustard. Helpings were a bit on the large side but the boys demolished it! Next time, will make the sauce a little thicker, but apart from that, it didn’t turn out too badly 😊

Decided to try a bit of a recipe experiment tonight. Sautéed onion, peppers, garlic and rosemary then added white wine to deglaze the pan, followed by a tin of finely chopped tomatoes, oregano and green olives. Seasoned a couple of chicken breasts then browned in a knob of butter and a touch of olive oil. Added the chicken breasts to the sauce to finish cooking and then garnished with parsley. Served it with herb roasted charlottes and a green salad. Needs a few adjustments but will be making again!

I had just over half a jar of @boldbeanco cannellini beans (sadly not gifted! 😉) leftover from making chorizo minestrone yesterday. Decided to make a cannellini bean dip with beans, lemon juice, lemon zest, garlic, olive oil and salt. Dip was delicious but quite rich, so dolloped it on some toast, and topped with red choice tomatoes, basil and more olive oil. Delicious combination as the tomatoes cut through the richness of the dip. Will definitely be making again.

As anyone who follows me knows, I love chorizo, and include it in all sorts of dishes including shashuka and in soup! This is a really easy to make chorizo minestrone. Finely sautéed carrots, celery onion and garlic sweated down, then garlic and diced chorizo, followed by chopped fresh tomatoes, chicken stock, beans and pasta. I was inspired by my lovely Australian foodie friend @foodgirl76 to make Bibimbap, a delicious Korean dish. I marinated steak in soy sauce, sesame oil and garlic and then very lightly sautéed julienned carrots and courgettes, shiitake mushrooms and the beef and served them in a bowl, on top of rice. Topped with a fabulous @clarence_court Burford Buff fried egg (kindly gifted). Served with a Bibimbap sauce of gochujang, Chinese rice vinegar, sesame oil, minced garlic and sugar.
Love the fact that you spend ages trying to make it look pretty and then stir it all together before you eat it so the egg yolk mixes with the sauce and ingredients!

I’ve been experimenting with this dish for a while - sweet and spicy chicken. Marinated the chicken in Shaoxing and cornflour. Made a sauce with soy sauce, Chinese rice vinegar, chilli sauce, honey, garlic and of course, tomato ketchup! Sautéed the chicken with spring onions and peppers, then added the sauce and let it thicken. Served with Jasmine rice, finely sliced spring onion and sesame seeds. Clean plates all round.

Still not 100% and fancied simple food for dinner, so made delicious Boulangere Potatoes to have with chipolata sausages (nutmeg and black pepper from @waitrose_westburypark ) and tenderstem broccoli. The potatoes are thinly sliced then layered with onion, thyme, butter and seasoning. Chicken stock is then poured over before popping them in the oven for an hour. Hit the spot!

Back from a lovely long weekend in Porto with a low level bug (the downside of planes!) and was in need of a hearty bowl of soup. With very little food in the house, this store cupboard soup did the trick! I haven’t made Moroccan lamb kebabs in ages and my husband and son demolished them! Apparently they are the best thing I’ve cooked in a long time! Just gutted the lack of natural light makes it tricky to take a decent pic - heyho - more important they taste good, right?!

It’s been a use up sort of weekend - made a kind of minestrone with leftover veg, beans and chorizo and a quiche for dinner tonight. Onions, the end of a leek, a bit of broccoli and peas to fill it out a bit!! And of course, a generous amount of @davidstowcheddar Topped with @clarence_court Burford Browns and a tub of double cream!

I love couscous with spiced roasted peppers and pan fried haloumi but the couscous needs to have a bit of extra flavour and texture. This is not my finest reel but you get the idea! Finely diced onion sautéed in olive oil, then a teaspoon or two or ras el hanout, chicken stock, wholewheat couscous and then diced soft apricots and toasted pine nuts. So good!!

This has been on my grid a few times before but it’s such an easy meal to make and so delish, I thought I’d post it again! Chicken breast chunks marinated in curry powder, chilli flakes, cinnamon, garlic and olive oil - then mixed with couscous cooked in chicken stock and olive oil with added sultanas. Baked for 30 mins and served with roasted cherry tomatoes, toasted pine nuts and finely chopped coriander and mint. Sounds odd but honestly it really works!!

My boys are out so decided to make one of my favourite speedy dinners - chilli paneer. So,so good!! The paneer is soaked in boiling water, then tossed in cornflour and sautéed so it’s soft on the inside and crispy on the outside. Stir fried some onions and peppers then added the paneer, along with soy sauce, sriracha, sweet chilli sauce and ketchup! Addictive!

As I had some Gruyère and tomatoes to use up, I decided to attempt a cheese and tomato quiche. Sadly was a bit over zealous with the blind baking, as was very keen not to have a soggy bottom, but ended up with leakage 🥲 (and yes we’re still talking quiche!!) Anyway, seems all was not lost as my son declared it the best quiche ever! Phew!!

I love beetroot and this beetroot dip is perfect for when it’s scorchio (is it ever anything else this summer?!) A Middle Eastern dip called Beetroot Borani, it’s really quick to make if you buy precooked beets. Simply dice the beets, then add olive oil, garlic, red wine vinegar, finely chopped dill, seasoning and a touch of Greek yoghurt. Serve topped with crumbled feta, walnuts, nigella seeds and more dill. Easy!!

Was looking through the recipes on my George’s Bristol Kitchen website and came across this cannellini and tomato stew. Really simple to make - finely chopped onion, celery and rosemary softened in EVO and then added garlic, chopped fresh tomatoes, thyme, seasoning, jar of Bold Bean cannellini and a very healthy glug of sherry!! We tried it tonight with these delicious Chorizo sausages from Waitrose and they were perfect with the bean stew! My son’s new favourite dinner!

I hadn’t made Albondigas (Spanish meatballs) for ages, as they take a while to make. Fortunately I made a big batch of the meatballs and there’s some for the freezer, so a quick dinner for another night 😊
It’s a beef and pork mix with onion, garlic, flat leaf parsley, smoked paprika, fresh breadcrumbs, seasoning and an egg. Cooked in a sauce of onion, garlic, smoked paprika, white wine, oregano, bay, seasoning and finely chopped tinned tomatoes. Served them with roasted charlottes and a green salad. Clean plates all round.

After a fabulous day celebrating my son’s graduation, we were in need of a big bowl of comfort food (okay, so we were all a tad hungover!). I was going to make spiced aubergine and mozzarella pasta but yet again my local supermarket had sold out! So decided to make my version of Bucatini Amatriciana. It’s traditionally made with Guanciale or pancetta but I used smoked bacon lardons, chilli flakes and San Marzano tomatoes. If you’ve never tried it, highly recommend!

I had some Maris Piper potatoes leftover from making roast potatoes at the weekend, so decided to make Boulangere Potatoes (apparently so called because they use to be cooked in the bakers oven!). Used my fab new mandolin to thinly slice the potatoes and layered them up with thinly sliced onion, fresh thyme, seasoning and knobs of butter. Added chicken stock and cooked for an hour. They were so yummy I could have eaten the whole pot!!!

Unlike @food4lovers, who made puff pastry vol-au-vents in 36 degrees 🥵, I decided to keep cooking to a minimum! This is my version of tabbouleh - still a good amount of herbs but less than in a traditional version. It’s a great lemony salad that’s perfect for when it’s hot and is great with pan-fried salmon. We were supposed to be having fish tonight but the person who did the food shopping didn’t buy enough! Tbh I think it was a cunning plan as my boys were much happier to be having this healthyish sweet and sour chicken with jasmine rice and cucumber. Demolished in minutes!

My son told me he doesn’t like couscous as he always finds it too dry, so I decided to make #taktouka to go with the Middle Eastern spiced chicken. Taktouka is a warm salad of tomatoes and peppers with herbs and spices and is delicious with a meal like this or just on its own. Recipe on my website.

I love a Tricolore salad but as I’d run out of basil, I added some pesto which I’d loosened slightly with some evo. The tomatoes are Pink Choice from @waitrose and they are delicious. Seems like everyone else thinks so too as my local store keeps selling out!

When you’ve only got chorizo, prawns and onion left in the house! With a distinct lack of ingredients, I decided to make a pasta sauce with what I had - sautéed onion, garlic and dried oregano before adding diced cooking chorizo, a tin of finely chopped tomatoes, pinch of sugar, seasoning and a tablespoon of sun-dried tomato paste. Just before it was ready, threw in some delicious king prawns and cooked for a further 3/4!mins. Topped with finely diced parsley and served on spaghetti. Will definitely be making this again!!

So there’s hardly any food in the house and I can’t go to the shops because I stupidly kicked a chair and now have a toe the size of a small planet!! Thankfully I found a couple of gorgeous @natoora courgettes, a few baby San Marzano tomatoes, red onion and a bit of salad in the bottom of the fridge. Drizzled the veg in olive oil and seasoning and then griddled until charred. Threw them on the salad leaves with toasted pine nuts and dressing. Was actually really good! Phew!
