I love asparagus wrapped in Parma ham and it's so easy to make! Just a couple of ingredients with a drizzle of oil and a bit of seasoning and you have a delicious starter or light lunch.
These spears are wrapped individually, although you can opt to wrap a few asparagus spears together in Parma Ham (but you don't get as much ham that way!!).
Cooking time varies depending on the thickness of the spears. I prefer to use a slightly thicker spear (which is easy enough when English asparagus is in season), although medium spears work well too.
They are also great served as a larger tapas spread alongside broad beans and chorizo in sherry,
Padron peppers and garlic prawns.
2-3 tablespoons of extra virgin olive oil
Asparagus spears
Slices of Parma ham
Seasoning
Manchego (optional)
- Pre-heat the oven to 200°C
- Remove the woody ends of the asparagus.
- Cut a slice of Parma ham in half.
- Brush the asparagus with a little olive oil.
- Wrap a piece of ham around each spear.
- Season.
- Place in the hot oven for about 8-10 minutes, depending on the thickness of the spears.
- Scatter over some grated Manchego (optional).
