Cod wrapped in Parma Ham


I love both cod and Parma ham, and having experimented with chicken wrapped in Parma ham, I thought I'd try it with cod loin.   I simply season the cod with salt and pepper before wrapping it in the ham, but it's also lovely with a middle layer of pesto.


I like to serve this with roasted charlotte potatoes, sprinkled with sea salt and thyme or rosemary.  In terms of greenery, then sauteed little gem and peas or roasted or griddled asparagus, are lovely options.

130g cod loin per person

Parma ham - 1 slice per piece of cod

Method

  1. Pre-heat the oven to 200ºC. 
  2. Season the cod loin.
  3. Wrap a piece of Parma ham tightly around the cod.
  4. Pour a small amount of olive oil into your hands and rub over the cod wrapped in Parma ham.  Alternatively you could use a pastry brush, but try not to get too much oil onto the fish.
  5. Place on a baking tray and then place in the hot oven.
  6. Cook for 15-20 minutes, depending on the thickness of the cod loin.
