Fig, parma ham and burrata salad


This is another really simple salad, which can be thrown together in minutes.   Burrata is very light and creamy and goes really well with the parma ham -  however for something so fresh, it's also quite rich.  So, if you prefer something less creamy, then mozzarella works really well as an alternative.


In terms of dressing then I love balsamic vinegar and use it whenever I have an excuse to do so!  However a dressing made with olive oil, lemon and honey is equally delicious.

Handful of rocket

3 ripe figs

2 slices of parma ham

1 burrata OR 125g mozzarella

Extra virgin olive oil

Balsamic vinegar

Method

Method

  1. Remove the figs from the fridge and set aside to come up to room temperature (cold figs just don't taste as good!).
  2. Scatter the rocket over the plate or salad bowl.
  3. Drain the burrata or mozzarella. 
  4. If using burrata, place this in the centre of the salad bowl.  If you have chosen mozzarella then tear it into pieces and scatter it over the rocket.
  5. Cut the figs in half and add to the bowl.
  6. Slice the parma ham into strips and arrange on top of the salad.
  7. Drizzle over the olive oil and balsamic vinegar.
  8. Serve with fresh, crusty bread.
