This is another really simple salad, which can be thrown together in minutes. Burrata is very light and creamy and goes really well with the parma ham - however for something so fresh, it's also quite rich. So, if you prefer something less creamy, then mozzarella works really well as an alternative.
In terms of dressing then I love balsamic vinegar and use it whenever I have an excuse to do so! However a dressing made with olive oil, lemon and honey is equally delicious.
Per person
Handful of rocket
3 ripe figs
2 slices of parma ham
1 burrata OR 125g mozzarella
Extra virgin olive oil
Balsamic vinegar
- Remove the figs from the fridge and set aside to come up to room temperature (cold figs just don't taste as good!).
- Scatter the rocket over the plate or salad bowl.
- Drain the burrata or mozzarella.
- If using burrata, place this in the centre of the salad bowl. If you have chosen mozzarella then tear it into pieces and scatter it over the rocket.
- Cut the figs in half and add to the bowl.
- Slice the parma ham into strips and arrange on top of the salad.
- Drizzle over the olive oil and balsamic vinegar.
- Serve with fresh, crusty bread.
