Tomato, shallot and basil salad


Tomatoes always remind me of walking into my Dad's greenhouse on a warm summers day and being hit by that delicious smell of home-grown tomatoes.


I love using tomatoes in my recipes, and fresh tomatoes are perfect for creating a tomato pasta sauce or salsa. They are also delicious served as a simple side salad - a lovely accompaniment to a nice piece of steak, or a dish like Chicken Milanese, or quiche.

Echalion shallot

Extra virgin olive oil

Balsamic vinegar

Seasoning

Basil leaves

Method

Method

  1. Take the tomatoes out of the fridge an hour before making the salad.
  2. Slice the tomatoes and arrange on the plate.
  3. Thinly slice the echalion shallot and scatter over the tomatoes.
  4. Season the tomatoes with sea salt and black pepper.
  5. Drizzle with olive oil and balsamic vinegar.
  6. Scatter over the basil leaves and serve.
