For the salmon with dill butter

1 salmon fillet per person

Butter (at room temperature)

Olive oil

Fresh dill

Seasoning


For the roasted beetroot

Bunch of fresh beetroot

Olive oil

Method

Method

To make the roasted beetroot

  1. Pre-heat the oven to 200°C.
  2. Top and tail, then peel the beetroot.
  3. Cut the beetroot in half and then into 2-3cm wedges.
  4. Drizzle some olive oil in the bottom a roasting dish and throw in the beetroot. Season and mix well to combine.
  5. Place in the hot oven for 25-35 minutes until the beetroot are cooked through and starting to char.


To make the salmon with dill butter

  1. Debone the salmon.
  2. Finely chop the dill.
  3. Mix the dill with x amount of butter.
